There's nothing quite like a night in with friends. As well as running Eat Sleep Organic we are best friends so we also need quality time together to shut off from work and chat about how we are, it's like free therapy!  Our recipe for the perfect girls' night in consists of home made popcorn, hot cacoa (our own recipe of course) organic cotton pajamas, face masks and an inspiring documentary on Netflix.

Just writing about it makes us want to jump into our PJ's, light a candle and start relaxing.  To help you along with your own night in we are sharing our favourite popcorn recipe with you.  It's cheap, delicious, easy and quick to make! Without refined sugar and clean wholefood ingredients. We’re sure you don't need more convincing than that.

Honestly making popcorn from scratch is fool proof, and the combination of flavours you can create is endless.  Seeing as it's Autumn our go to flavour has been pumpkin pie spice.  We realise not everyone in the UK has access to ready made pumpkin pie spice - so check out Oh She Glows super simple spice mix recipe here.  Or if you don't have all the ingredients maybe use a combination of cinnamon and nutmeg.  There are no rules, go for whatever floats your boat. 

Always choose organic popcorn kernels, they are actually very inexpensive.  If you are fortune enough to live near a Wholefoods Market they do loose organic popcorn kernels great for anyone looking for a zero waste snack!

Pumpkin Pie Spice Popcorn

1 Cup of Popcorn Kernels. 

1 - 2 Tablespoon of organic cold pressed Coconut Oil.

3 Teaspoons of Pumpkin Pie Spice (or however many you like depending on your taste).

1 Tablespoon Maple Syrup.

Heat the coconut oil in a large saucepan with lid.  Be very careful as the oil may spit out at you when opening the lid so best to wear oven gloves.  Once the oil is very hot add in the popcorn kernels and put the lid back on the saucepan.  Once you hear the popcorn popping shake the pan every now and again until all the popcorn is ready, which should take a few minutes. 

Once the popcorn is cooked, transfer to a bowl and add in your toppings! Et voila your own perfect popcorn!
