Level Veggie Bistro Madrid

Since visiting Madrid a couple of weeks ago I have been dying to share with you an incredible vegan gem in the heart of the city.  Level Bistro is a plant based restaurant situated on the outskirts of the beautiful El Retiro Park and only a 10 minute walk from my hotel. 

The restaurant's quirky interior design was light and refreshing. The glass terrace at the front of the restaurant was my favourite feature. Despite the temperatures reaching 46 degrees celcius the restaurant felt cosy and quiet! 

Our waiter Pablo, who spoke excellent English (sorry Pablo for our awful Spanglish)  was enthusiastic, warm and extremely knowledgable about each dish.  The menu was completely vegan with lots of raw dishes which I couldn't wait to try!  Since the menu was so incredible we decided to order lots of dishes so that we could try as many as possible (always the best way to order when eating out no?)

Every dish brought to us was a feast for the eyes and complete works of art!  They were almost too beautiful to eat!  We had three starters between two of us –

  • Raw Vegetable Pate with crackers made with ecological broccoli, sun dried tomatoes and spices.
  • Raw Veggie Rolls  made with dehydrated slices with a crisp mix of vegetables and forest pate.
  • Creamy asparagus from Navarre accompanied by pumpkin cream and toasted hazelnuts from Piedmont PGI.  

The asparagus dish was the only 'cooked' dish that we ordered,  all the other dishes had been cooked below 41 degrees celcius in order to retain the enzymes of the ingredients.  The asparagus was creamy and light and the pumpkin cream... well anything with pumpkin and you've got me drooling!    

We shared the raw lasagne for our main course.  The flavours were incredible!  You wouldn't have even known the dish was raw and without pasta. The courgette, dehydrated tomato sauce and the vegan ricotta and parmesan tasted like an authentic lasagne!  It took a lot of will power not to devour these dishes before taking pictures of them first.

Despite feeling pretty full after our starters and main course there was no way we could turn down desert!  Seeing as there were only three deserts on the menu we thought why not order them all!  They did not disappoint.

My favourite was the strawberry dish which looked like pretty little cream filled parcels. The fine slices of dehydrated organic strawberry stuffed with vanilla cream with banana pieces on a base of chocolate sauce, aptly named 'Strawberry Kisses' was like heaven in a mouthful.  The raw carrot cake and raw chocolate cake were also out of this world.

I seriously urge anyone visiting Madrid to try Level Veggie Bistro even if you're not vegan.  The quality of the organic ingredients and the presentation of the food is enough to please everyone.  I visited the restaurant with non vegan family members who were new to plant based raw food and they thoroughly enjoyed!
